There exist a handful of traditional St. Patrick’s Day celebration foods and ingredients that are popping up all over the internet right around now such as Guinness, Irish Soda Bread, Corned Beef and Cabbage, and Baileys Irish Cream. I like to celebrate with something magically delicious and sweet and, of course, green! Lucky Charms cereal seem like they were made for this holiday and these Lucky Charms treats will bring magic to everyone’s St. Patty’s Day.
Magical St. Patty’s Day Treats
Lucky Charms is one of those cereals that we all asked for as kids every time we were dragged along to the grocery store, but somehow we rarely got to actually buy and devour. That’s how I remember it anyway! Could be selective memory though cuz I’m pretty sure my mom would say she remembers buying it often, or often enough! Either way, this cereal still seems like such a special treat to me. So, I’ve decided to make it even more special by making it into a cereal treat with gooey marshmallow and melted butter then dunking it into melted white chocolate and topping it off with those iconic Lucky Charms marshmallows. And of course I had to dye the whole thing green! Otherwise it just wouldn’t truly be a St. Patty’s Day celebration, now would it?!
One of the best parts of this recipe is having to pour out the entire box of Lucky Charms cereal and separate out the marshmallows from the oat cereal pieces. I promise you, this is actually quite fun and makes for the perfect task to keep your kids busy! My kids had a ball seeing who could do this faster. I just had to keep a good eye on them to make sure more marshmallows went into the bowl than into their little mouths. Bribing them with promises of the first treat once these were all done certainly helped. Don’t judge! Bribery works wonders.
I have seen on good ol’ Amazon a bag of just Lucky Charms marshmallows for sale. Nicely done, Amazon, nicely done. I wouldn’t recommend it for this recipe, as much as I like to support Amazon, because you need both parts of the cereal to make these treats. Plus, how would you get your kids involved (aka, keep them busy and off their electronics for 5 minutes) if not for having to separate the cereal?!

Lucky Charms Treats
I like to celebrate St. Patrick’s Day with something magically delicious and sweet and, of course, green! Lucky Charms cereal seem like they were made for this holiday and these Lucky Charms treats will bring magic to everyone’s St. Patty’s Day.

- 3 tablespoons unsalted butter
- 1 – 10 ounce package (about 40) marshmallows
- green food coloring
- 1– 14.9 ounce box Lucky Charms cereal, divided
- 12 ounces white baking chocolate, such as Bakers or Ghiradelli
Prepare: Grease a 13x9x2 inch baking pan with butter. Pour box of cereal into a large bowl. Separate marshmallows from oat pieces and place in separate bowls. Set wire rack on parchment lined baking sheet. Set these all aside
Make Lucky Charms Treats: In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in 2-3 drops green food coloring. Add oat pieces of Lucky Charms cereal. Stir until evenly coated. Using buttered spatula or wax paper evenly press mixture into prepared pan. Allow to cool. Once cooled, cut into 16 squares using a sharp knife
Dip & Sprinkle: Melt white chocolate in medium bowl for 60 seconds at 50% power, stir and continue to microwave in intervals of 30 seconds at 50% power until completely melted and smooth, stirring in between. Once completely melted, dip one side of each Lucky Charms treat into the chocolate, allowing excess to drip into bowl and place on wire rack. Immediately sprinkle tops of treats with Lucky Charms marshmallows before the chocolate sets. Continue dipping and sprinkling until all treats have been dipped. Allow to set completely
Treats can be stored at room temperature for up to one week
