This Nut-free Paleo Chocolate Chip Cookie is heavy on flavor and satisfaction, yet is free of dairy, gluten and nuts. This, my friends, is a revelation in the world of Paleo eating!

  1. Prepare: Preheat the oven to 350 °F. Line a baking sheet with parchment paper. Double stack baking sheet by placing a second baking sheet under the parchment-lined one to prevent cookie bottoms from over-browning or burning. Set aside
  2. Mix Dry Ingredients: In a medium mixing bowl, stir together the pumpkin seed flour, coconut flour, baking soda, baking powder and salt. Set aside.
  3. Make Cookie Dough: In the bowl of a stand mixer, beat together the coconut oil and coconut sugar at medium speed until well combined, about 1 minute. Add in the sunflower seed butter and vanilla extract and beat on medium speed until well combined. Add in the egg and beat on low until well incorporated, scraping down the sides and bottom of the bowl as needed. Stir in the flour mixture until well combined. Stir in 1 cup chocolate chips, reserving the remainder to press into tops of cookie dough before baking
  4. Scoop & Bake: Using a cookie / ice cream scoop, scoop out 12 2-tablespoon sized balls of dough. Roll each scoop of dough into a ball between your palms, place on the prepared cookie sheet and press down lightly with the palm of your hand to flatten the dough. Gently press the remaining ¼ cup of chocolate chips evenly into the top of the dough balls. Bake for 11-14 minutes or until the surface of the center of the cookies no longer appears wet. The cookies be very soft and will continue to cook as they sit on the hot cookie sheet after removing from the oven. Let cool completely on the baking sheet

Notes

  • Store baked cookies in an airtight container at room temperature for up to 5 days
  • Cookie dough may be frozen. Form dough into balls and freeze in a single layer on a sheet tray then place in a freezer-safe bag for up to 3 months. Allow dough to reach room temperature prior to baking. Bake as usual
  • Baked cookies may be frozen. Freeze them in a single layer on a parchment-lined cookie sheet. Once frozen, place the frozen cookies in a freezer-safe bag for up to 3 months. Place frozen cookies in the microwave for 20 seconds on 50% power to warm
