Using a kitchen scale in this recipe is useful because you'll be able to make the same size donuts and ensure they fry up evenly.

When you fry these, stick close to the Dutch oven. It doesn't take long for them to cook and they won't taste oily if you get them in and out. Only do 3 at a time so the temperature of the oil stays where you want it.

Once the donuts are cooled, roll them in sugar, then fill them with the creamy filling. Use a butter knife to create the placement for the filling by going through the middle of the side of the donut about 3/4 of the way.
