Why Potatoes in Rolls? They attract moisture and help provide soft, airy rolls. Yeast also rises faster with the potatoes and is helpful in the delicious outcome.

WHAT KIND OF POTATOES DO YOU USE? I recommend using Yukon Gold potatoes for the best flavor and color. Russet potatoes can also be used. One large or two small-medium potatoes should yield 6 ounces of mashed potato.

CAN THESE ROLLS BE MADE GLUTEN-FREE? I have not tried to make this recipe gluten-free. If you would like to try it, I would recommend using a gluten-free cup-for-cup or measure-for-measure flour such as Bob’s Red Mill.

HOW DO I STORE LEFTOVER POTATO ROLLS? Leftover rolls can be stored at room temperature in a large ziplock bag for up to 4 days or they may be frozen for up to 3 months. Thaw at room temperature then toast.
