Peppermint Bark Brownies 

 Ingredients for Peppermint Filling: – 5 cups confectioners’ sugar – 6 tablespoon unsalted butter, softened – 1/2 cup light corn syrup – 1 1/2 teaspoon peppermint extract – 3 tablespoon milk

 Ingredients for Brownies: – 1/3 cup unsweetened cocoa powder – 1 1/2 teaspoon espresso powder, – 2/3 cup boiling water – 1/3 cup semi-sweet chocolate chips – 4 tablespoons unsalted butter, melted – 2/3 cup  vegetable oil – 2 large eggs – 2 large egg yolks – 1 tablespoon  vanilla extract – 2 cups granulated sugar – 1 3/4 cups all-purpose flour – 3/4 teaspoon  kosher salt

 Ingredients for Chocolate Ganache Topping: – 1 3/4 cups semisweet chocolate, chopped (or semisweet chocolate chips) – 1/2 cup heavy cream – 2 tablespoons unsalted butter – Pinch salt – 1/2 cup Williams-Sonoma Peppermint Bark, broken into small pieces

Start off by making your brownies: -Preheat your oven to 350ºF -Line your pan with parchment paper -Mix ingredients together and bake for 22-25 minutes

Prepare Peppermint Filling and spread on to cooled brownies.  Put brownies into refrigerator to chill so peppermint filling can set up.

Prepare Chocolate Ganache and pour over chilled brownies.  Sprinkle peppermint bark over chocolate and chill so chocolate can set up.
