Creamsicles with Graham Cracker Crumble

As far as no bake frozen desserts go, this recipe is a dream! Orange Creamsicle Bars are made from just a few ingredients and they require no hot oven and not even an electric mixer. These are perfect for the warm summer months to help you beat the sweltering summer heat.

Ingredients

Creamsicle Mixture

  • 1 cup orange juice store-bought with no pulp or freshly squeezed and strained for pulp (from 3-4 large navel oranges)
  • 1 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 tablespoons Domino® Golden Sugar

Graham Cracker Crumble

  • stick unsalted butter
  • 4 sheets graham cracker broken into small pieces
  • 1 tablespoon Domino® Light Brown Sugar
  • pinch kosher salt

Instructions

  • Prepare creamsicle mixture: Add all ingredients to a blender or food processor and blend / puree until well combined. Pour into popsicle molds, leaving 1 inch of head room and freeze for 30-40 minutes or until set but not frozen solid
  • In the meantime, prepare the graham cracker crumble. In a small saucepan over medium-low heat, melt the butter 5-7 minutes till golden. In a medium bowl, mix graham cracker pieces, brown sugar, and salt. Add browned butter and mix until evenly coated. Allow to cool before using
  • Once creamsicles have set, sprinkle tops of popsicles with graham cracker crumble. Insert popsicle sticks and freeze at least 2 hours or until completely frozen

Notes

  • To make the stripes as seen in some of these photos: Start by preparing the creamsicle mixture as directed in the recipe and place in the fridge to chill.To make striped creamsicles, you will need an additional ½ cup of orange juice. Next, add 1 tablespoon orange juice to popsicle molds and freeze for 20 minutes. Remove creamsicle mixture from the fridge and stir. Add 2 tablespoons creamsicle mixture to each popsicle mold, freeze for 20 minutes. Repeat twice, alternating between plain orange juice and creamsicle mixture, chilling creamsicle mixture and orange juice in the fridge between freezings
  • To break graham crackers into small pieces, place the graham crackers in a sealed ziplock bag, with as much air removed as possible. Take a rolling pin or mallet (flat side only) and gently pound on the graham crackers to break into pieces
  • The orange juice can be substituted for orange juice concentrate. Follow package directions to mix and use in the recipe as directed - Browned butter is super easy to make, however, if you are short on time, feel free to substitute with melted unsalted butter in the graham cracker topping
  • Did you know popsicle sticks can be reused? Simply wash with warm soapy water, rinse well and allow to air dry
