Fluffy Sprinkle Cookies

Fluffy, vanilla-forward, very kid-friendly sprinkle cookies are perfect for birthday parties, bake sales or random Tuesdays. Baking these in a convection oven produces the perfect bake, so use it if you've got it!

Ingredients

  • 1 cup unsalted butter room temperature
  • 1 ⅓ cups granulated sugar plus more for rolling
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 ⅔ cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • cup rainbow sprinkles

Instructions

  • Preheat oven to 350ºF (177ºC) (if you have a convection oven, turn it on). Line two baking sheets with parchment paper or silicone baking mats.
  • In a stand mixer, with the paddle attachment beat the butter and sugar together on medium-high until light and fluffy, about 2-3 minutes.  
  • Add eggs one at a time then the vanilla and beat until smooth.
  • With the mixer on low, stir in the flour, cream of tartar, baking soda, and salt until all dry ingredients have been mixed in.
  • Add the sprinkles and mix until just evenly combined.
  • Roll cookie dough into heaping tablespoon sized balls and roll in granulated sugar.
  • Arrange on prepared , leaving about 2 inches between each ball.
  • Bake until very light golden brown, about 12 to 14 minutes.
  • Let cookies cool for 5 minutes on baking sheets then transfer to wire rack to cool completely. Enjoy!
