Preheat oven to 325ºF. With melted coconut oil or ghee, grease 9 cups of a muffin tin. Set aside

In a large bowl, combine flour, baking soda, salt, and cinnamon, whisking to combine.
2 cups almond flour, ½ teaspoon baking soda, ½ teaspoon sea salt, 2 teaspoon ground cinnamon
In a separate bowl, toss the grated apple with the lemon juice.

To the apple mixture, add the eggs, honey, and coconut oil or ghee and stir to combine.

Add wet ingredients to dry ingredients, stirring until thoroughly combined.
Using a large ice cream or cookie scoop, fill muffin cups ¾ full.
Bake for 20 - 25 minutes until golden brown and toothpick inserted in center of center muffin comes out clean. Cool on wire rack
